- How busy will your café be? The number of coffees you serve daily helps determine machine size and speed.
- How many baristas will be working? More baristas usually means you’ll need more group heads. A dual boiler machine also helps if you want to steam milk and pull shots at the same time, ideal for keeping up during the morning rush.
- How much bench space do you have? Make sure you measure your counter, machines, grinders, and milk stations all take up room.
- Power supply: Some machines need just a standard outlet (10amp), others require more, it’s good to know before installation.
- Plumbing: Decide if you want a plumbed-in machine or one that runs on a tank, both have pros and cons.

- Boiler rate: How quickly your machine can heat water (faster boiler rate) = quicker recovery between shots.
- Group head: The part of the machine where you lock in the portafilter, most commercial coffee machine have 2 or 3. (aka where the espresso magic happens).
- Dual boiler: Machines with separate boilers for brewing and steaming. This lets you do both at once without temp drops.
- Shot timer: Tracks the time your espresso is extracting so you can dial it in perfectly.
- Pressure profiling: Lets you adjust water pressure during extraction, for total control over flavour.
